Pumpkin carving ’16

We had a blast last night carving pumpkins. To put Ross in a chipper mood, I turned on Pandora “Hello I Love You (Doors)” Mix – that’s actually our song ♥ and it brought back a lot of memories! It got me feeling pretty good too. George picked out a pumpkin bigger than himself (of course) and Dad agreed to carve it, so we went with it, and even carved a spooky face on it.

We had a little more fun with Julius’ pumpkin because we got to decide the design for him, so we did Lady Liberty! Because #landofthefreehomeofthebrave. We even showed George pictures of the Statue of Liberty and did a brief history lesson because he wasn’t sure what it was. We had way more fun than previous years – George still doesn’t like to get his hands gooey but we hope that will change soon. Julius is all about the goo – but he was absolutely terrified of George’s spooky pumpkin – mommy had to hold him to calm him down because he was not sure what we were up to exactly. Also, the pics are really dark but it was actually dark when we took the photos, so yeah. Happy Halloween from our fam….!

Pumpkin bread from leftover pumpkin guts

I wanted to do something with the leftover pumpkin from pumpkin carving, so I decided to use the new breadmaker and make pumpkin bread. I also cleaned and roasted the pumpkin seeds, which are my favorite snack (outside of Reese’s) every Halloween season.

I used this tutorial from FlouronmyFace.com on how to best clean your pumpkin seeds, salt and roast them. It turned out great – but I’m glad we didn’t make that much because they are so addicting. The first night I woke up so thirsty because of all of the salt. Waking up with dry mouth is the worst.

For making pumpkin bread, I used this recipe for a yeast pumpkin bread for a breadmaker. I left out the ginger because I hate it – I have flashbacks of acid reflux while pregnant with Julius and I was told to drink ginger tea, which is disgusting, imo, so I puke in my mouth every time I smell or taste ginger. I used half white flour and half wheat flour to make it healthier and added a little extra water to be absorbed by the heavier wheat flour.

I baked then pureed the pumpkin chunks in our baby bullet because our blender broke a few years ago and we just never bought a new one. Everything we would need to make in a blender we can make in the baby bullet. It never got enough use from the 6-9 months you need to make baby foods, anyway.

The breadmaker was a challenge. I was tripped up because 1) I mixed up all of the ingredients first, which is wholly unnecessary, and 2) we came back from a long walk and it had over-risen to the glass on the top of the breadmaker, so I hit “stop.” Then the only way to bake it was to start the whole mixing and proofing process all over again.
#wtf sooo…I need a little practice with the bread machine.

On the bright side, the bread machine works, I just need to get my baking game solid. Also, I’ve learned you shouldn’t even use carving pumpkins to bake, as they are usually overgrown, and the best pumpkin for baking is found in the smaller pumpkins. Which explains why Ross thought it was nutmeg or cinnamon bread. #wheresthepumpkin
